Tomorrow is the first Harvest Literature Festival for our new school. John Adams Academy is a charter school, this is it's inaugural year, and it focuses on a classical education, service, leadership and patriotism. We love it and are so happy with what they are providing.
I'm helping with this harvest event and I signed up to contribute to the bake sale. Needless to say, I will not have time tomorrow to make cupcakes or anything fancy. I decided while roaming Target, I would just make rice crispy treats, then it dawned on me that I could add some cinnamon bark essential oil and a sticker to make them slightly special. Here's what I did and I've included the jpeg for the sticker labels if you would like to dress yours up.
1 stick (8TB) of Salted Butter
2 packages of Mini Marshmallows
1 tsp Salt
3 drops of Cinnamon Bark Oil
8 cups of Rice Krispies
1/4 cup Sugar
1/4 tsp Powdered Cinnamon
Melt butter in heavy sauce pan over medium to low heat. You want to brown it but not have it burn.
Once it smells nutty and has this amber golden brown color, reduce heat further. Add salt and marshmallows.
I just keep mixing it until everything is smooth.
Turn off heat. Add the Cinnamon Bark Essential Oil.
Stir in and add the Rice Krispies.
Stir cereal and marshmallow mixture together. Then move to buttered pan. I use a 13x17 pan that is 2" deep. I love this pan because I can double recipes like these treats and brownies.
Once transferred pat flat and mold into pan. I actually believe I packed the mixture too tight today, this is what happens when your cooking, taking photos and talking to kids, lol. They still have great flavor, but watch how much you press down.
I decided to add a little cinnamon and sugar to the top of these. In a little bowl combine 1/4 cup of sugar and 1/4 tsp cinnamon, then sprinkle on top.
Time to cut and dress them up.
